Tomorrow is one of my favorite holidays! It is a time for good food, good company, and a chance to reflect on what we are grateful for. And don’t we have much to be grateful for?
As I reflect, I am grateful for my family. And you CFWH, know some of them…Rob & Sandra Exline. Rob, my brother, introduced our family to Paleo two years ago out of a family health crisis. At first, I was reluctant. But, now I embrace it and am a big fan. My husband and I are two years going strong in Paleo. We don’t do it perfectly, but we feel so much better and really like it.
So, I just want to tell you, CFWH, that I am grateful for my brother. You all are the beneficiaries of his passion for Cross Fit, for Paleo and good health in general. When you see Rob next and if you have been impacted & helped by his passion, please consider thanking him for what he is doing in and through CFWH.
This wouldn’t be a nutrition blog without a Thanksgiving recipe. Here is spicy twist on a traditional side:
Twisted Cranberry Sauce
1 cup water
1 package fresh cranberries
1-2 fresh jalapeños, seeded and finely chopped (adjust if senstive to the heat)
1 tablespoon chopped fresh cilantro
1/4 teaspoon cumin
2 to 3 green onions, chopped finely
1 tablespoon fresh lime juice
Instructions
1. Bring water to a boil. Add cranberries. Return to a boil; Reduce cranberries by cooking 10 minutes without stirring. Reduce down, but allow some cranberries to stay whole. Pour into a bowl and let cool.
2.Add remaining ingredients and mix lightly. Refrigerate. Serve chilled or at room temperature.
Note: If you need a bit of sweetness, add 2-4 TBSP agave nectar.
