Crowd-pleasing paleo treat: Almond butter cookies with Cream and Strawberries

The July 4 pool party last week at my friends Jess and Tanner’s place had this amazing spread– deviled eggs, slaw with homemade mayo, burgers and frozen watermelon and cantaloupe balls. The most popular item on the menu was dessert: almond butter cookies topped with cream and strawberries!

This wasn’t some sort of “paleo” meet up. Jess and Tanner have been following the paleo diet for a while and they just cooked the food that they would eat with options like burger buns, chips, etc. for the guests. There were a lot of people, including a few toddlers and kids. Not surprisingly, most people pretty much stuck to the paleo menu because it was delicious!

Cookies topped with cream and fresh fruit is a quick, easy, somewhat indulgent, paleo treat. As long as you don’t make a meal of it, you’ll be fine! Here is the recipe:

Cookies: (based on this recipe from FastPaleo.com)

Ingredients:

  • 1 cup almond butter
  • ¼ cup coconut oil (I used some ghee/clarified butter I had at home)
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp honey (Or to taste. If you like a more savory cookie, skip the honey and add some salt)
  • 2 cups almond meal
  • ½ tsp baking soda
  1. Preheat the oven to 350F.
  2. Mix all wet ingredients in a bowl – almond butter, oil/ghee, honey and vanilla extract. Beat the egg into the mixture.
  3. In another bowl, combine the almond meal and baking soda. Add this to the wet mixture to form cookie “dough”.
  4. On a baking sheet, scoop 1tbsp of the mixture at a time. Round and flatten to cookie shape.
  5. Bake in the oven for 10-12 minutes until edges are golden brown.
  6. Once out of  the oven, let them cool down to room temperature.

* Note: These cookies are buttery and crumbly!

Topping: Cream and Strawberries

Jess used whipped cream for the party. If you’re trying to avoid /minimize dairy, coconut cream is a good alternative. Since I always have some in the pantry that is what I used.

Ingredients:

  • 1 can coconut milk (full fat, not “Lite”)
  • 4-5 diced strawberries
  1. Chill the can of coconut milk in the fridge while preparing/baking cookies (20-30 minutes).
  2. Once cookies are ready for the topping, open the can and scoop out the creamy layer on top into a separate bowl (the rest of it can be used later for cooking and be added to curries, soups, etc.).
  3. Lightly whisk to make whipped coconut cream.
  4. Spread 1tbsp coconut cream on each cookie and top with sliced strawberries.

There you have it – as paleo a dessert as the summer will allow. Happy munching!
