I love summer. Fresh, seasonal fruits and veggies and grilled food – a Foodie’s dream. When recently shopping at our local farmer’s market, there are loads, and loads of fresh blueberries right now. Big, plump, juicy blue goodness. We cannot get enough of them. Here is a recipe that thinks outside of the box a bit that combines the joy of summer!
Grilled Chicken with Blueberry Sauce
2-4 Boneless Chicken Breast
Salt & Pepper to taste
1 small onion, diced
1 1/2 c. fresh blueberries (or thawed, frozen berries)
1/4 c. apple cider vinegar
1 tsp raw honey
1 1/2 tsp dried thyme
1/2 TBSP olive oil
Season chicken with 1 tsp dried thyme, salt & pepper. Grill to preference.
While grilling chicken. Saute onions in olive oil until transluscent over medium high heat. Add rest of the ingredients and cook another 5 minutes until thickened. When chicken is done, pour blueberry sauce over chicken and serve. Adding some roasted or grilled summer veggies like broccoli,zucchini and summer squash rounds out this summer feast.
