What did you have for breakfast? This is what I had this morning. With a bunch of leftovers you can make a yummy, pretty quick breakfast.
Fritatta Italiano
1/2 lb pork sausage, browned
1 TBSP olive oil
2 TBSP fresh minced garlic
2-3 tomatoes seeded & diced, or 1/2 can of tomatoes
1/2 onion, diced
1 TBSP tomato paste
3 TBSP oregano
1 TBSP Thyme
1 TBSP Basil
Salt & pepper to taste
5 eggs
Heat oven to 375 degrees. Brown the pork sausage in a cast iron skillet or one that can go into the oven. Set sausage aside. Whisk together the eggs in a small bowl and set aside. Add olive oil to cast iron skillet and cook onion over medium heat, until translucent (a few minutes). Add tomatos, cook for 2 more minutes. Add tomato paste and spices (oregano, basil, thyme, salt & pepper). Stir and heat through. Add sausage back into the pan, and mix all ingredients together. Pour eggs on top of mixture, and mix through. Keep on stove for about 2 minutes until the mixture sets a bit, do not stir. Place skillet directly into the oven. Bake for approximately 15 minutes or until a knife inserted comes out clean.
