I want to share the recipe that I am considering serving our family for Thanksgiving. It would be a nice compliment to the Citrus Turkey posted the other day. It is elegant, healthy AND oh so easy.
Lemon Broccolini
2 TBSP Ghee
1 garlic clove, pressed
2 TBSP fresh flat leaf parsley, chopped
2 tsp lemon zest
1 1/2 lb fresh broccolini
2 TBSP fresh lemon juice
1 TBSP olive oil
Salt for boiling water
1 TBSP sea salt, course
Fresh ground pepper
Melt Ghee with garlic in a large skillet over medium heat. Remove from heat and stir in parsley and lemon zest. Cook broccolini in boiling salted water to cover 3 to 4 minutes or until crisp-tender; drain well. Toss broccolini with lemon juice, olive oil and course sea salt. Add fresh ground pepper to taste. Transfer to a serving platter. Serves 6-8
